Here we share her favourite recipe.

The Orange Chocolate Pie

  • 2 big organic oranges
  • 6 eggs
  • 180 gr palm sugar
  • 50 gr cacao powder
  • 1½ tsp. baking powder
  • 200 gr. almond meal
  • ¼ tsp. sea salt

For the coating of chocolate

  • 150 gr. dark chocolate 75-80%
  • 3 tbsp. hot water
  • 50 gr. coconut oil

  • Wash the oranges and cook in the boiling water for 2 hours.
  • Transfer the boiled oranges to a bowl and let them cool.

The first 2 steps can be done ahead of time.

  • Cut the oranges into quarters and remove the seeds. Blend or puree the oranges with the peel.
  • Preheat the oven to 180 °C.
  • Mix the almond meal, baking powder, cacao powder, sugar and sea salt with the almonds.
  • Beat the eggs and stir in the orange puree followed by the almond meal mix.
  • Grease the 24 cm spring form pie tin with coconut oil.
  • Pour the batter into the prepared tin and bake for 2 hours.

For the coating

  • Melt the dark chocolate gently with the water and coconut oil above boiling water.
  • Pour over the chocolate topping.
